Afternoon shower great time for fun, making memories

Memories of just yesterday can be as warm as those from awhile ago. Last Sunday afternoon as I watered my ferns, God sent a wonderful light rain. There was no thunder, no lightning and the sun even shone for a bit during the rain. I called Erin home from across the street and couldn't help but notice how she slowed down just so she could get wet.

I recalled how the five cousins used to beg Granny to let us play in the rain. Suddenly, I couldn't resist the urge. I called out for Erin, Justin (Baugh) and Zack (Garrick) to come play dodge ball with me in the rain. We played for a good half hour until the light rain stopped. We all sat on the front porch and watched the steam rising from the cement driveway.

After I dried up, I fixed the kids some Mac and Cheese. I was happy to play in the rain once again. I was happier to make that memory for those three cousins.

Here are some quick and easy recipes for you to throw together just in case it rains again and you want to take time to play! Thanks for the rain, Lord!

Corned Beef Hash

1/2 c chopped red bell pepper 1 c chopped onion

1/4 stick butter 2 c finely chopped

boiled potatoes

2 cans corned beef 1/2 c ketchup

1/2 c chicken broth dash mustard

Saute pepper and onion in butter. Add rest of ingredients. Bake in Pyrex dish in 350 degree oven for 30 minutes. Serve with green salad and rolls.

Oven-easy Chicken

1 1/2 lb fryer (cut for frying) 1/4 tsp pepper

1 c flour 2 tsp paprika

2 tsp salt 1/2 c melted margarine

Mix flour, salt, pepper, paprika and kip pieces of chicken in mixture. Place melted margarine in bottom of shallow baking dish. Lay chicken in margarine and bake in 400 degree oven 30 minutes on each side or until tender and browned. Serve with prepared potato salad and corn on the cob.

Lemon Squares

Cream together 1/2 c butter, 1 c flour, 14 c powdered sugar and a pinch of salt. Pat into 8 x 8-inch pan. Bake at 350 degrees for 15 minutes (do not brown).

Mix 2 eggs, 1 c sugar, 2 T flour, 2 T fresh lemon juice - Pour over hot crust as soon as taken from oven. Bake 20 minutes or until set. Cool - sprinkle with powdered sugar. Cut into small squares.
