Memories & Recipes
Come to think of it, God may have given her that gift to be synonymous with her second gift of being able to genuinely love elderly people. She's lucky enough to have a career that takes advantage of both of these gifts. She is caregiver to Norman and Velma Gaddy. Six days a week she goes to their home to cook for them, feed them, shop for them, clean a little and generally see to their daily needs. The up side of this for the Gaddys is that she really cares for them. When Hurricane Ivan came through, Brenda couldn't stand the thought of them being by themselves so she stayed with them. Brenda's home in Fulton was cut in half by a huge tree. God works in mysterious ways, doesn't He? Whenever our family gets together, Brenda fills us in on what's been happening to Mr. and Mrs. Gaddy. Dean and I visited the Gaddys some months ago. They are a very warm and hospitable couple. They must love each other very much. You see, they celebrated their 72nd wedding anniversary on Sept. 8. Happy Anniversary Norman and Velma Gaddy! Here are some of Brenda's recipes prepared frequently for Mr. Gaddy.
Cauliflower Casserole
1 lg. bunch fresh cauliflower 1 small block Velveeta 1 c mayonnaise salt and pepper 2 T butter
Cook cauliflower until tender in boiling, salted water. Drain and add mayo, cheese, salt and pepper. Place in casserole dish sprayed with Pam. Dot with butter and bake at 350 degrees until cheese is melted.
Broccoli Casserole
1 can mushroom soup 2/3 c mayonnaise 1 c grated cheddar cheese 2 eggs well beaten 2 pkgs. frozen chopped broccoli Ritz crackers
Cook 2 pkgs frozen chopped broccoli for 5 minutes. Drain well; fold in other ingredients. Place in buttered casserole and sprinkle with crumbled Ritz crackers. Dot with butter. Bake at 350 for 30 to 45 minutes.
Italian Potatoes
6-8 red potatoes 1/2 stick margarine 1 pkg Italian seasoning mix 1/2 c chopped onions
Wash and quarter potatoes. Place in 13X9" casserole dish. Add chopped onions, Italian seasoning mix and margarine. Bake, covered at 375 degrees for 1 hour.
