Christmas is a wonderful time of the year!

Christmas is the season for sharing and caring. I get tired of the retail rat race each year, even though I participate.

I look forward to having the holiday decorations all up and the presents wrapped and placed under the tree.

Then I begin to plan recipes for the parties and gatherings. From the time Erin was 2- years-old until she was the ripe old age of 9, Dean and I hosted the children in our community to a story time Christmas party.

Each year I read the children a new story that in some way pointed them back to the Nativity scene and the true meaning of the season. After reading several Christmas stories and finishing with "The Night Before Christmas," Santa would come in for a visit. The moms would get photos with Santa as the kids gave him their wish lists. Our whole community would come over just to see the kids' faces and visit once a year with the other neighbors. I miss that magical scene.

Too often we think parties have to be elegant to be a success. Those parties were anything but elegant. Our house could barely hold all the happy guests! Santa had to rest, so we stopped having those parties but they are still in our memories!

Here are some quick finger foods in case you can convince Santa to come by your neighborhood.
    Fried New Potatoes
12 small whole new potatoes
12 red skewers or toothpicks
1 pkg. green Margarita salt
2 T. water

Microwave the potatoes and water in a glass bowl, covered with plastic wrap, on high for 5 minutes. Stir and then return for another 5 minutes. Carefully remove the potatoes to drain on paper towels. Meanwhile heat oil in a deep fryer to 360 degrees. Place potatoes into basket and fry until tender. Drain on paper towels and salt with the green salt. Place skewer or toothpick in each potato and serve with ketchup and guacamole dips for color.
    Small Sloppy Santas
1/2 lb. ground meat
1 bottle Bullseye Original
BBQ sauce
1/2 c. water
1 pkg. pull apart rolls

Brown and drain ground meat. Return to skillet and add BBQ sauce and water. Simmer until sauce thickens. Serve in slow cooker to keep warm. Rolls can be placed in a pretty Christmas basket. Spoon a small amount of the warm meat onto the rolls. (Be sure you slice the rolls in half for easier opening.)
    Peanut Butter Bars
1 pkg. peanut butter cookie
mix
2 egg whites
1/2 c. chopped peanuts
1 c. confectioners sugar
2 T. water
1/2 t. vanilla

Preheat oven to 350 degrees. Combine cookie mix, peanut butter packet from mix and egg whites in bowl. Stir until blended. Press into ungreased 13x9x2" pan. Sprinkle peanuts over dough. Bake for 16 - 18 minutes or until golden brown. Cool, then combine confectioners sugar, water and vanilla in small bowl. Stir until blended and drizzle over top. Cut into bars.
