Impossible Coconut Pie is delicious!

Well, the SEC championship game has ended the season with a dilemma thanks to Auburn’s win over Florida. But that’s okay, because one of our Thomasville natives sort of put Auburn to the test too.

Katie Spinks went through round one and round two of the Miss Auburn competition. That is quite an accomplishment. Unfortunately Katie didn’t make it all the way to the finals but we are extremely proud of her. She is obviously a great representative for Clarke County.

Katie’s favorite recipe is Impossible Coconut Pie. I was able to get her recipe from her mom, Blanche Spinks, when I saw her at Alabama Wholesale. Dean and Blanche’s brother, Lawrence, always share their armchair coaching techniques when we go in on Mondays to pick up our store supplies.

Impossible Coconut Pie
                    4 eggs
              1/2 c Bisquick
                3/4 c sugar
                1/2 c butter
              1 3/4 c milk
            1 1/2 tsp vanilla
        1 3-oz. can of coconut

Preheat oven to 350 degrees. Put all the ingredients in the blender except 1/3 of the can of coconut. Blend these ingredients together for one minute on medium. Pour into greased 9” pie pan. Sprinkle the remaining coconut over the top of the pie. Cook for 40 minutes or until brown on top.
Chess Pie
  1 1/2 c sugar
      4 eggs
  1/3 c butter
    2 T cream
1 T lemon juice
  1 T vanilla

Mix all ingredients and place in pie shell and bake until custard is set. This recipe is very old. My grandmother from Pineville, LA used to make this when we visited her on the weekends.
  Mackinac Fudge
              4 c sugar
              1 c milk
            1 tsp vanilla
              1 c butter
1 1/2 c mini marshmallows
12-oz. chocolate stars candy
    12-oz. chocolate chips
2-oz. unsweetened chocolate
      1 c nuts if desired

Mix sugar, milk and vanilla in a saucepan. Add butter and bring mixture to boil. Let boil for minutes. Remove from heat and add marshmallows. Then add chocolate a little at a time, stirring thoroughly after each addition. Add nuts if desired, pour into a 9X13 pan and chill. This recipe is from Jennifer Skipper.
