Youngsters trade places with moms for party fun

My two granddaughters, Erin Rivera and B e t h a n y Walker, had their third C h r i s t m a s c o o k i n g party.

The girls a t t e n d i n g , E m i l y Thompson, H a n n a h May, Micah Dunagan, Katie Skipper, Whitney Dumas, Colleen Morgan, Miranda Frith, Margaret Bradford, Della Rae Huggins, Maggie Cox, Leighton Powell and Mary Hannah Newsom all decided this year we would switch places with our moms. The girls would do the planning and preparations for the party and the moms would be the kids and play the games.

They chose a Mexican Christmas theme and planned a menu of chili, cheesy chili dip, cheese quesadillas and Mexican wedding cookies. We also had dips and tortilla chips and lime green punch in a punch fountain surrounded with greenery which the girls cut. We needed two ovens so Mrs. Laura (my daughter) took some of the older girls to her house while I helped the younger girls prepare the quesadillas. I made the chili and the older girls made the chili cheese dip. We all took turns making the cookies and Mrs. Laura made pigs in the blanket for Maggie and Leighton since they liked them so much last year.

We set the table buffet style and the moms started arriving at about 3:15 With the girls acting as judges we began our activities by forming two acting companies. The actresses would perform a skit to “Grandma Got Run Over by a Reindeer.” The winners were Kim Thompson (grandma), Nicole Frith (grandpa), Vickie Dumas (reindeer), Shea Skipper (Santa) and Christy May (grandson). The second company consisting of Laura Newton (grandma), Tiffany Newsom (grandpa), Star Dunagan (grandson), Libby Bradford (Santa), and Suzanne Cox (reindeer) would have won except that Grandpa Nicole was so funny when she laughed at grandma’s fate.

The second activity was a dance contest to the Mexican Hat Dance. Shea Skipper won that one unanimously! Then things got dirty when the ladies played musical chairs to a Mexican mariachi band CD. Tiffany Newsom won that one. Each mom was given a Santa treat bag and then they took turns pounding the pinata filled with ornaments and treats. They filled their bags and the girls really were able to fill their hearts knowing they had entertained their moms. They want to do it again next year.

Here are our recipes!
Cheese Quesadillas
  1 (3 oz.) pkg cream cheese
1 c. shredded Mexican blend
                cheese
        1 c queso cheese
          8 flour tortillas

Beat cream cheese, queso cheese and Mexican blend cheese until creamy. Spread top of one tortilla. Melt a little margarine in the bottom of skillet and place the cheese tortilla topped with a plain tortilla in the skillet. Brown on both sides then cut into quarters. You can top them with cream cheese or salsa if you like.
  Chili Cheesy Dip
1 pkg. (8 oz.) cream cheese
    1 can chili no beans
  1/2 c shredded Mexican
          cheese blend
    1 T chopped cilantro

Spread cream cheese onto bottom of microwaveable pie plate; top with chili and cheese. Microwave on high 45 seconds to 1 minute or until cheese blend is melted. Sprinkle with cilantro.
Mexican Wedding
          Cookies
  1 c. unsalted butter
  at room temperature
1/2 c. powdered sugar,
plus some for coating
        1 tsp vanilla
1 3/4 c all purpose flour
  1 c. pecans, chopped

Preheat oven to 275 degrees and line cookie sheets with parchment paper.

Using electric mixer, cream the butter and sugar until smooth. Beat in the vanilla and gradually add flour. Mix in the pecans with spatula. With floured hands shape about 1 tsp of dough into a crescent and place on cookie sheet. Bake for 40 minutes. When cool enough to handle but still warm, roll in additional powdered sugar.
