Coffee is good for you!

Coffee shops and home coffee grinders are all the rage these days. is even said that some coffee is good for you, when not taken excessively. (It's that last part that always makes me feel guilty.)

Now if anyone is a judge of good coffee, it would be me. When Dean and I first met, he came to my house for a visit and of course I made him a cup of coffee. That's what you do in Louisiana and if that coffee isn't Community dark roast, then you are just not being hospitable. When Dean sat down at the table to have his coffee, he took a sip and then sort of grinned at me. Then he laughed and said, "Okay, now where is the real coffee?" He actually thought that my coffee was some sort of joke. He really didn't make a good first impression!

That was the first time I thought about my coffee being strong. I had been drinking it the same way since I was old enough to remember. But whether you make your coffee strong or not, here are some coffee house recipes to try at home.

Chocolate Cappuccino

3 c cold water 1/4 c finely ground French roast

coffee 1/2 c chocolate syrup

1 c whipping cream

grated chocolate

5 cinnamon sticks

Pour water into cappuccino maker; add coffee to filter and brew according to instructions. Fill cups to 1/3 full. Add 1 T plus 1 tsp of chocolate syrup to each cup. Pour whipping cream in small deep, chilled pitcher. Place steam nozzle of cappuccino maker in bottom of the pitcher.

Slowly release steam completely. Lower pitcher until end of nozzle is just below surface of cream. Continue to steam until whipping cream foams and doubles in volume. Pour foamed cream over coffee, filling to full. Sprinkle with grated chocolate and place cinnamon sitck in each cup.

Cafe Mocha Cream

1/2 c medium ground

Colombian coffee

4 1/2 c cold water

3 T chocolate syrup

1/2 c creme de cacao

Sweetened whipping cream

grated chocolate

Brew water and coffee in drip pot. Pour brewed coffee into 6 oz. coffee cups. Add 1 tsp chocolate syrup and 1 T creme de cacao to each cup. Top each with whipped cream and grated chocolate.

Viennese Orange

Coffee

1/2 c whole Colombian

coffee beans 2 tsp grated orange rind

1/2 tsp cinnamon

1/2 tsp brandy extract

4 1/2 c cold water

Place coffee beans in grinder and process to medium. Place orange rind, ground coffee, cinnamon and brandy extract in coffee basket lined with filter. Add water to coffee maker and brew. Serve with cream and sugar to taste.

Kona Cream

2/3 c ground Kona coffee

4 1/2 c water

2 c pineapple juice

1 qt. vanilla ice cream

Brew coffee and water in drip pot. Chill then combine with pineapple juice and ice cream. Beat at low speed of electric mixer until smooth and frothy.
