Doing nothing not fun

I was enjoying my first day off since Christmas last Sunday. I've had pieces of days off but once you wake up, dress and go to the office even for awhile, your day is shot. I convinced myself that I really couldn't do much in just one day, so I decided to do nothing.

But there was nothing to watch on TV, at least nothing I liked. I went down in the woods below our house and after having a quiet moment, and admiring the red bud trees and new green grass and warm sunlight, there was nothing to do in the woods. I came back home, made some coffee and sat on the porch, doing nothing. Then it struck me.

After only a half day of doing nothing, I was ready for something to do! Here are some recipes for those days when you want to do nothing. They're just that easy. But believe me, doing nothing is just not much fun.

Crusty Bread

Sandwiches

4 Crusty rolls

(I use muffaletta rolls)

1/2 lb each Cajun roast beef, shaved ham, and swiss cheese

( from the deli counter)

3 minced dill pickles 1/4 c sweet red pepper relish

2 green onions, cleaned

and chopped

Prepare the relish by combining pickles, onions and pepper relish in a small bowl. Put mayonnaise on each half of the crusty roll, then add a slather of relish. Pile on the cheese and meats. Enjoy!

Baked Potatoes with

Steak Sauce

4 large baking potatoes

small tub margarine

salt & pepper

shredded cheese

Heinz 57 Sauce

Worcestershire Sauce

A1 Sauce

Mix about three tablespoons of each of the steak sauces in a small bowl. Bake the potatoes until tender. Cut in half while still hot and immediately salt and pepper the potatoes. Fork the potatoes in the skin then fork in some margarine. Top with shredded cheese and a dab or two of the steak sauce mixture.

Crab Salad

3 oz. fresh lump crabmeat

1 stalk celery, chopped 1/4 c white onion, chopped

1 1/2 T mayonnaise

1/8 c cocktail sauce

1 tsp Worcestershire sauce

salt and pepper

Mix all ingredients together with a fork. Place on bed of lettuce leaves to serve.
