Memories & Recipes
Bill and Mary Gates have given us tomatoes, Sammy and Marie Hutto have given us much summer produce from their garden, John and Sue Champion have given us some of John's famous watermelons and Brother Jimmy Powell and Mrs. Virginia have sent us home with many blueberries, tomatoes, zuchinni, and white and yellow squash. We did not put in a garden this year because of the shortage of rain, which proved to be a good decision. I am so glad there are some farmers who can grow crops in spite of a drought. Thank you so very much, all of you. And I especially want to thank Mrs. Nettie Bennett for the sweet relish that she made for Dean. Mrs. Nettie, he is sweet enough so I wanted you to know I am taking care of it for him. Everyone knows I could be a whole lot sweeter. I know ya'll won't believe this but I even put some of Mrs. Nettie's sweet relish on top of my supreme pizza from our store the other night and it was gooooooooood! I really need that recipe! I do have the recipe for Mrs. Nettie's chili sauce which is also really good, it is just a tad hotter than the sweet relish recipe. Try some when you get fresh tomatoes from the gardens, the other things just aren't real tomatoes.
I also received the recipe from Linda Vice for the spinach, feta casserole. Here they are!
Combine onions, peppers, tomatoes salt and sugar. Cook over low heat for 45 minutes then add spices. When it thickens add vinegar and cook until it gets thick, stirring often. Process in sterilized jars. Serve over cooked field peas or red beans and rice.
Mix all ingredients. Pour into casserole dish. Bake at 350 degrees for 1 hour.
Mix dry ingredients. Mix remaining ingredients in blender and stir into dry mix. Pour into greased loaf pan. Bake at 350 degrees for 1 hour.
