Boil those peanuts! They may be wet and messier to eat but the researchers say boiled peanuts are better for you than raw, dry or oil-roasted nuts. Yep, researchers at Alabama A&M University in Huntsville say boiled peanuts bring out up to four times more chemical that help protect us against diseases such as cancer, diabetes and heart disease. Lloyd Walker, chair of A&M's Department of Food and Animal Sciences co-authored the study and said water and heat that penetrate the nuts in the boiling process release beneficial chemicals. But don't over do it. Overcooking the nuts destroys the useful chemicals.
Fall festivals are being slated around the area and there's always a big pot of boiled peanuts on the burner somewhere. Now you don't have to feel guilty when you eat a bagful.
