Easy Frito Pie gives you time for holiday baking

It's been awhile since I've shared memories and recipes with readers of The Democrat.

My computer has had a bug, not a virus but a bug. I know because it tells me I have to debug. It is a brand new computer and I really don't have much of a fond relationship with it right now.

Anyway, I know how busy Christmas can be for everyone. My mom was a single parent of four children, held a full time job and always made sure we had a home cooked meal at suppertime. My favorite was Frito Pie. remember having it most often around Christmas when Mom was busy making the homemade candies, pies and cookies that we looked forward to every year. Since most families have their own traditional Christmas goodies, here are a few quick suppers to help make a little extra time for you. That's Christmas present we can all use.....TIME!

Now go make some homemade Christmas goodies.
Frito Pie
1 large bag Frito corn chips
3 cans Hormel chili
without beans
grated cheddar or Jack cheese
chopped onions
Spray 9X12 baking dish with cooking spray. Lay corn chips in bottom of dish, cover with the chili and then top with cheese. Bake in 350 degree oven until cheese is fully melted. I top mine with chopped onions.
Ramen Noodle Bowl
1 lb. frozen grilled chicken
breast strips
2 c water
1 pkg. Chicken flavored Ramen
noodle soup mix
1 (1lb.) bag stir fry vegetables
1/4 c stir fry sauce

Heat chicken strips in skillet then remove from skillet and add water. Bring water to boil then break noodles into water stirring until lightly softened. Add vegetables and reheat to boiling, boil for about 5 minutes, stirring occasionally. Add seasoning packet and stir fry sauce then cook about 2 more minutes.
Quick
Vegetable & Beef Stew
1 lb. boneless sirloin
cubed to 1"
1 (1 lb.) bag frozen stew
vegetables
one 15 oz. can chunky
garlic & herb tomato sauce
one 14 oz. can beef broth
2 (5 1/2 oz.) cans V-8 juice

Spray skillet with cooking spray and brown the cubed sirloin. Stir in remaining ingredients. Heat to boiling, reduce heat, cover and simmer about 6 minutes.
