Pecans are great in holiday treats

I enjoy it when friends stop by the store to visit. Gary Crosby is one of those friends. He makes a point to come by to visit me and harass Dean. I love it! The other day he had some pecans for our family. I don't have time to crack them and get the meat out, so I'll be taking them to the farm store to get that done. God really knows the seasons and what tastes good in each of them. Christmas just has to have pecan pies, and that is the season when pecans grow.

I remember Christmas at Granny's house with all of my uncles and aunts and cousins. Granny always made her pecan pies. Aunt Ann always made her famous date nut loaf. Uncle Bill made ambrosia salad. My mom always made the homemade divinity and fudge. I don't remember what Aunt Chris made but I know she always decorated the tree. She used the shiny foil icicles and put them on the tree one at the time until the whole tree was completely covered. To me that was the prettiest part of Christmas besides the colorful hard candies in Granny's big punchbowl on her table. Everyone helped make the turkey and dressing. Uncle Richard and Uncle Boogie always saw to it that the kids had lots of fireworks. (I think they did that because they liked to shoot them). After dinner all the kids would go outside to play with our new toys and finish shooting off any leftover firecrackers or sparklers. It was always a warm Christmas, no matter what the temperature was outside. I miss those times and those loved ones.

Now I'm the grandmother and I try to make memories with my grandchildren. Dean has a large family and we usually spend Christmas Eve all together. We see to it that the kids have fireworks and we each bring a special dish. I want them to have warm thoughts to get them through the cold times. Here are some special recipes to make memories for your families.
Cindy's Pecan Pie
3 eggs
1 C light brown sugar
1 C white corn syrup
1 1/2 C pecan halves
1 uncooked pie shell
1/2 tsp almond extract

Use a whisk to beat eggs and sugar. Add corn syrup and almond flavoring and mix well. Stir in pecans and pour into pie shell and bake at 300 degrees for one hour and 45 minutes, or until lightly browned. Let cool completely before serving. See how easy this pie is to make!
Divinity
4 C sugar
3 egg whites
1 C light corn syrup
1 tsp vanilla
3/4 C water
1 C chopped pecans

Place sugar, syrup and water in a heavy 4 qt saucepan over low heat. Stir until sugar is dissolved, then cook without stirring to 255 degrees (hardball stage). Remove from heat and pour in a fine stream, beating constantly into the stiffly beaten egg whites. Continue beating until mixture holds its shape and loses its gloss. Add vanilla and nuts. Drop quickly from tip of spoon onto waxed paper in individual peaks.
Pecan Cookies
1 C brown sugar
1 egg
1 T self rising flour
1/2 tsp vanilla
1/4 tsp salt
2 C pecan halves

Sift dry ingredients. Beat egg white until stiff and fold into dry ingredients. Add vanilla and pecans. Drop by teaspoon onto greased cookie sheet and bake at 275 degrees for 20 minutes.
