Comfort foods make the dreary days pass better
and shared with Dean and me last weekend when it was so rainy and yuk outside you didn't want to do anything but lay around and be a couch potato. I happen to know that the recipe takes a long time to complete. I'm sure glad he didn't want to be a couch potato! The friend didn't want to be identified so I'll just say SN developed the recipe by taking three recipes and combining and culling ingredients to make a really good Brunswick Stew. Now isn't that what all good chefs do? Thanks SN, it was really good. I also found the recipe for Aunt Ann's famous date nut loaf. It is a candy not a bread or cake loaf. As a child I loved her candy, but if I'd known it had dates in it, I may not have even tasted the candy. I haven't tried to make it yet, but I will soon. Enjoy! SN's Brunswick Stew 4 chicken thighs 1 bag frozen seasoning blend 1 (2lb) boston butt 2 cans diced tomatoes 1 can tomato sauce 5 cans chicken broth 5 cans water 1 bag frozen limas, whole kernel corn, cut okra 1/2 C ketchup hot sauce, salt, pepper and worcestershire to taste 4 stalks celery, chopped 1 large onion, chopped 5 large potatoes, chopped In a large pot combine chicken broth and water to cover, thighs and boston butt; boil until tender and meat falls off the bone. Place meats in a bowl and remove bones; chop meat very fine. Refrigerate broth overnight and skim the fat from the top the next day. Bring broth back to boil add meat and all other ingredients and let them simmer for about four hours, stirring constantly to prevent sticking to bottom of pot. Serve warm. This recipe is even better the next day. Just don't be in a hurry! Aunt Ann's Date Nut Roll 2 C sugar 1 C milk 1 T butter 1 small pkg chopped dates 2 C chopped pecans 1 tsp vanilla dash of salt Bring sugar, milk and butter to a boil in a large saucepan (Aunt Ann used a black iron pot). Add dates and boil for 20 minutes on medium heat. Remove from stove; beat for 2 minutes. Add salt and vanilla and beat again. Add chopped nuts and continue to beat until mixture is cool enough to handle. Turn onto a clean, wet cloth and shape into a long roll. Let cool in damp cloth until firm enough to slice into 1/4 inch slices. *I've been looking for this recipe for ages and I finally found it in an old school cookbook. I used to love to eat this every Christmas. I'm still looking for my Granny's sugared popcorn recipe.
