Fast, easy casseroles save time

It's tax time again and it's easy on the menu at our house.

This is the time when one dish wonders come alive; the mighty casserole is queen again. Let's face it there is only one dish to wash if you buy paper plates or bowls and drink out of a can. I found out long ago that there really is no super mom/wife. Only women who know how to cook a mean casserole or one dish meal.

Dean and Erin like meat and I prefer vegetables so I try to combine these when I can. Of course, there are some days when I don't even cook at all. Pizzas from our store are the go-to supper on those days.

There are different levels of casseroles. I go for the super easy during tax time. Here are some of those casseroles you can try. Just add a salad and dessert if you are so inclined; I usually just throw a cookie at Dean and Erin during this time of year. They catch pretty well!

Texas Hash


1 lb. ground beef
2 onions, sliced
1 green pepper, chopped
1 can whole tomatoes (16 oz.)
1/2 c uncooked rice
2 tsp salt
1 tsp chili powder
1/2 tsp pepper
Cook ground beef, onions and green pepper until beef is browned; drain grease. Stir in tomatoes with liquid and the remaining ingredients. Pour into 12 x 7 1/2 x2" casserole dish. Cover and cook in 350 degrees oven until rice is tender and liquid is absorbed, about one hour.

Beef Stew Casserole


2 lbs. boneless chuck cut into 1" cubes
4 carrots, sliced
2 stalks celery, sliced
2 onions, chopped
1 can chopped potatoes (16 oz.)
3 T all purpose flour
salt & pepper to taste
1 can whole tomatoes (16 oz.)
1 c beef broth

Mix beef, carrots, celery, onion and potatoes in a 4 qt dutch oven. Mix flour, salt and pepper and stir into beef mixture. Stir in tomatoes with liquid and the beef broth. Cover and cook in 325 degree oven until beef is tender, about four hours.

Zucchini and Franks


1 can whole tomatoes (28 oz.)
6 frankfurters, sliced
2 onions, chopped
1 zucchini, sliced
1 c uncooked elbow macaroni
1 1/2 tsp dried basil
1 tsp each salt, garlic powder and pepper
(or to taste)

Mix tomatoes and liquid with the remaining ingredients in ungreased two-quart casserole pan; break tomatoes with a fork. Cook uncovered in 350 degree oven until macaroni is tender, about 35 to 40 minutes. Serve with grated Parmesan cheese or cheddar cheese.
