It's time for Mardi Gras and it brings back memories from Louisiana.

In elementary school we were given the day off for Fat Tuesday and for Ash Wednesday.

Louisiana is a predominantly Catholic state and the public schools accommodated the students from the community.

During the Lenten season, the Catholic students were not allowed to eat pork. Our meal before the Mardi Gras Lenten season always consisted of ham

sandwiches and a king's cake, followed by a school wide parade of students wearing the mask each student had created.

I was not raised Catholic so I enjoyed Mardi Gras mostly as a holiday away from school.

Besides, the lunchroom ladies served fish sticks on Fridays and I liked fish sticks. But whether you are Catholic or not, it couldn't hurt to honor Jesus by giving up something of great value for just a day or a few weeks. At the very least, you would be giving Him a moment of thought. Who knows what could happen!

If you decide to give up pork for Lent, here are some good pork recipes for your binge just before Ash Wednesday. After all, that's what Mardi Gras is all about.

Pork Sausage Kebobs


1 (12 oz) bottle beer
1/3 C molasses
1/4 C brown sugar
2 cloves minced garlic
2 T mustard
1 tsp salt
2 lbs pork sausage links in 1" pieces
1 onion in 1" pieces
2 bell peppers in 1" pieces

In medium bowl, combine beer, molasses, brown sugar, garlic, mustard and salt. Place sausage, onion, and bell peppers in large zip lock bag and add beer mixture. Refrigerate for 1 hour, remove and thread through skewers. Spray broiler pan with nonstick spray and place kebobs on pan. Broil 10 to 15 minutes or until sausage is browned.

Grits and Pork Chops


1 pkg quick cook grits
3 oz Velveeta cheese
salt & pepper to taste
butter or margarine to taste

Prepare grits according to directions and servings desired. While hot add velveeta cheese and butter. Set aside and keep warm.

In a large cast iron skillet cook pork chops about 10 minutes, turning occasionally. Salt and pepper pork chops after cooking and place on top of grits with pan gravy. Prepare as many pork chops as your family will eat.
Mac N Cheese
with Ham Steak

Prepare packaged macaroni and cheese according to package directions. Cook one ham steak in a non stick skillet just until warmed thoroughly on each side. Cut the ham steak into small squares and add to the prepared macaroni and cheese. Serve immediately.
