Craving some warm homecooking
Memories & Recipes
Cindy Garrick

Well we've made it through Valentine's Day chocolate and now we're working on eating all the birthday cakes of family members in February.

Dean's is the 15th, mine is 20th, Manual's is the 21st and Laura's is the 27th. That's a lot of sweetness for any family to digest. It's time to think about some real food now. I've been craving some warm homecooking. I guess because I've been preparing easy meals during tax season. I'm thinking about mashed potatoes, green bean casserole, and smothered chicken. Maybe even a chicken pot pie with green salad and a tall glass of tea. I wouldn't mind having potato salad, oven barbeque chicken and baked beans. Of course roast with rice and gravy and buttery corn would be nice too. Wow, it sounds like I'm hungry for anything that I call real food.

Here are some recipes that will taste good and may take a little time to prepare; but would be so worth the effort. Enjoy!

Pork Chops and Turnips

4-6 pork chops
1 pod garlic, chopped
salt & pepper
4 young turnips, peeled and
cut into fairly large pieces
flour
2 T oil
1 1/2 c water
1 1/2 tsp Worcestershire sauce
1 onion, chopped

Salt and pepper chops then coat with the flour. Brown in oil in a large dutch oven. Remove chops and saute onion and garlic. Return chops to Dutch oven and add turnips, water and Worcestershire sauce. Cover and simmer for 1 hour. Serve turnip gravy over rice.

Meatloaf

1 1/2 lb ground meat
1 tsp salt
1 envelope dry onion soup
1 tsp Worcestershire sauce
1 egg, slightly beaten
1 6 oz can evaporated milk
pepper to taste
sharp cheddar cheese slices
Mix all ingredients together, except cheese, and form into a loaf. Bake in lightly greased shallow pan at 350 degrees for 1 hour. Cheese slices may be placed on top of meatloaf just after removing from oven.

Garlic Cheese Grits

2 c water
1/2 c butter
salt
2 eggs, separated and whites
stiffly beaten
1 c quick grits
salt & pepper
1 roll garlic cheese
Worcestershire and tabasco
sauce to taste

Bring water and salt to a soft boil. Add grits slowly, stirring constantly, as it will thicken quickly due to the small amount of water. After a few minutes, remove from heat and add cheese that has been cut into small pieces, and the butter. After cooking a few more minutes, add egg yolk, salt, pepper, Worcestershire and Tabasco sauce. Mix well, Fold in stiff egg white with a fork. Put mixture in a greased baking dish and bake 30 minutes at 350 degrees, or until golden brown. Serve immediately.
