I love, love, love my friends and I want all good things for them. I recently learned that two of my friends are in a lifelong battle with heart disease.

I'm upset with that because I know that the heart is a muscle and even though I am not a doctor, I think that muscles can be strenthened. Bodies can be healed in most cases through lifestyle changes incorporating diet and just a little excercise.

I'm challenging my friends to join me on a quest for better health. I heard that drinking one glass of wine daily purifies your blood, tea is a good drink with it's antioxidants, dark chocolate will be good for you in moderation and there are even foods that you can eat to reduce depression. I'm going to be studying more on nutrition so that I can educate myself on what's good. That's my problem, I really don't know much about food and what it does to the body.

I've learned the hard way not to hold in your anxieties. It's better to go ahead and throw a good fit every once in a while and relieve some stress. Just be sure to set things straight before you go to bed that night. Forgive so you'll be forgiven. Stress can cause you to produce the hormone cortisol which in turn causes you to gain weight, which causes you more stress. Get rid of it!

Here are some recipes that I know are good for your health.

Souffle' Topped Flounder


2 flounder fillets
2 tsp unsalted margarine,
melted
1 T reduced calorie
mayonnaise
1 T plain low fat yogurt
1/2 tsp lemon juice
1/8 tsp each curry powder
and paprika
dash red pepper
1 egg white

Place fish, skin side down, in a broiler pan coated with cooking spray; brush fish with margarine.

Broil 4 to 5 " from heat for 4 minutes. Beat egg white until stiff peaks form. Combine remaining ingredients then fold egg whites into mixture. Spoon evenly over fish. Broil 4" from heat for 2 minutes until puffed and golden. Serve immediately. (157 calories)

Marinated Pepper Slaw


1 small head cabbage,
shredded
3 medium red peppers
thinly sliced
1 medium onion, grated

1/2 c red wine vinegar
1/4 c reduced calorie
mayonnaise
1 T Dijon mustard
1 T sugar
1 clove garlic, minced
1 tsp each,celery seeds
& pepper
1/3 c finely chopped parsley

Combine cabbage, red pepper and onion in bowl, mix well.

Combine remaining ingredients in blender and process until smooth.

Pour over cabbage. Cover and chill overnight. (54 calories per serving)

Cappucinno Parfaits


1 pkg unflavored gelatin
2 1/2 c cold coffee, divided
1/4 c sugar
1 c evaporated skim milk
2 T Kahlua

Combine gelatin and 1/2 C coffee in a small bowl, let stand 1 minute. Heat remining 2 cups coffee to a simmer in saucepan. Add gelatin mixture and sugar to hot coffee; cook over low heat until gelatin and sugar dissolve. Remove from heat; stir in evaporated milk.

Cool and pour into 8 inch square baking pan; freeze until almost frozen. Spoon mixture into blender; add Kahlua and process until smooth. Return to pan; freeze until firm.

Spoon into small parfait glasses and serve immediately. (152 calories)
