Wrap new way to enjoy sandwiches
Memories & Recipes

Cindy Garrick
I looked in the latest issue of Southern Living the other day and found a recipe for a New Orleans Muffaletto. That has got to be the greatest sandwich ever developed.

But, since I am trying to get healthy, I decided to develop it further to make my conscience feel just a little better after I indulge. I thought about the new way to eat sandwiches in this decade---a new healthier way to wrap your teeth around the same meats and vegetables that you did in the old timey sandwiches, but not with the heavy, starchy bread.

Now I have invented the Muffaletto Wrap! You get the same good taste but without the calories from the bread. I am so excited that I am sitting here right now, trying to develop a new fangled way to make a "healthier" ribeye steak. There is just no way to slim it down.

There are no other ingredients but the thick, juicy steak itself. I have already done away with the A1 steak sauce.

I guess some things you just shouldn't mess with. Anyway, here is my recipe for the "New" New Orleans Muffaletto as well as some other good recipes. Try them!

"New" New Orleans Muffaletto

Olive salad
2/3 c salad olives
1 T drained and chopped capers
3 cloves minced garlic
1/2 c pimiento, chopped
1/2 c black or kalamata olives,
chopped

Mix all ingredients and place in covered bowl in refrigerator for at least two hours before making sandwich or wrap.

Muff Wrap

2 oz thinly sliced ham
2 oz thinly sliced salami
2 oz provolone cheese
1 package sandwich wraps

Place wraps on waxed papers. Chop meats and cheese into 1/2 " squares, mix and place down the center of the wrap. Dress with olive salad and fold bottom of the wrap up and the two sides in to make the sandwich wrap. Enjoy!

Slaw Tuna Sandwich

1 can water packed tuna
2 multi seed rolls
1 c leftover cold slaw
two slices lettuce
and tomatoes
4 T olive oil
and vinegar dressing

Toast the rolls on a pan sprayed with non fat cooking spray until browned on each side. Dress the roll on top and bottom with oil and vinegar dressing. Add tuna, lettuce, tomato and slaw. Serve with apple slices this summer out by the pool, in your bikini.
